Lavender Sable Saison
A lovely culinary-inspired libation, this saison is an ode to lavender sablés; a type of shortbread cookie that originated in France. Lavender, lemon, and sea salt combine with wheat, oats, and barley for a delicious fusion of flavors. After fermentation with a traditional French saison yeast, we age the beer on toasted French oak for three months, coaxing subtle notes of vanilla out of the wood to complement the dry finish.
