True to its name, this barrel-aged saison is a dark and mysterious libation. A blend of barley, wheat, and rye combined with citrusy hops, grapefruit peel, and sour wort provides the foundation for this peculiar beer. After fermentation with a French saison yeast, we age this “saison noir” in a variety of spirit barrels for seven months to further develop interesting layers of flavors. The finished beer has earthy, herbal aromas of juniper and thyme balanced by fruity spice notes of citrus peel and wild black cherry.
