Partnered with Bale Breaker Brewing Company to brew a Double IPA with Wet and Fresh Kilned Simcoe, picked and flown day of brew from Loftus Ranches in Yakima Valley. Wet hops were added to every vessel in the brew house. Double dry hopped with the fresh kilned hops. Simcoe gives a bright grapefruit and tropical character to this easy drinking double IPA.

Terroir Invitational Project

Merlot grapes from the Francis Ford Coppola Winery Estate in Geyserville, were spontaneously fermented along with a wort produced in the pilot brewery using Sierra Nevada estate malts. After primary fermentation the beer was aged for 9 months in red wine barrels. The result is this deliciously tart and complex 100% wild fermented brew.
