Let’s be honest, you opened this recipe because you either love fruitcake or you love to hate it. Hold the snark ‘cause once you try a freshly baked slice that’s spiked with Celebration IPA, you’ll curse the cake no more.
Preheat oven to 300°F. Lightly grease two 9x5-inch loaf pans and line them with parchment.
Combine nuts, dried fruit, and flour in a large mixing bowl. Toss well to coat evenly.
In another large mixing bowl, combine spice cake mix, Celebration IPA, vegetable oil, and eggs. Beat for 3 minutes. Fold in fruit-and-nut mixture.
Pour batter evenly into loaf pans and bake for 90 minutes, or until a toothpick inserted in the center comes out clean.
