Ingredients
- 1 box (15.25 oz) spice cake mix
- 1 cup Celebration Fresh Hop IPA
- 1/2 cup vegetable oil
- 3 eggs
- 1.5 cup nuts (chopped walnuts, pecan halves)
- 2.5 cups dried fruit (cherries, raisins, chopped dates, chopped pineapple)
- 1/4 cup flour
Step 1
Preheat oven to 300°F. Lightly grease two 9x5-inch loaf pans and line them with parchment.
Step 2
Combine nuts, dried fruit, and flour in a large mixing bowl. Toss well to coat evenly.
Step 3
In another large mixing bowl, combine spice cake mix, Celebration IPA, vegetable oil, and eggs. Beat for 3 minutes. Fold in fruit-and-nut mixture.
Step 4
Pour batter evenly into loaf pans and bake for 90 minutes, or until a toothpick inserted in the center comes out clean.
Step 5
Let cool in pan. When cakes are completely cool, wrap them tightly in plastic wrap and store at room temperature.
